Grilled Sausage and Summer Squash Jump to RecipeGrilled Sausage and Summer Squash is flavored with lemon and herbs and this dinner has all the flavors of summer.Use what ever type of sausage and summer squash you have on hand! When it’s zucchini season, most people love easy recipes that use zucchini, right? So for this week’s I’m featuring this Grilled Sausage and Summer Squash that’s a perfect way to use overly-abundant squash from the vegetable garden, but even if you (gasp) have to buy zucchini, this is quick and easy for a summer dinner! This is a recipe I’ve been enjoying for years, and in that time I’ve stopped adding Kalamata Olives and started using a few more chopped fresh herbs in this dish. And please don’t skimp on the lemon, olive oil, and herb sauce that gets mixed in with the cooked squash and sausage; that’s what makes this easy grilled zucchini and sausage so good! And we loved this with fresh lemon pieces to squeeze on at the table.
